Post your favorite quick 'n easy recipes here. I know I could use some ideas! I have one idea so far, and this one is usually a hit!
White Chocolate Peppermint Bark
1 block of white chocolate (or you can use the white chocolate chips)
Candy Canes
heat white chocolate in double boiler over low heat until melted
(I think there is a way to melt chocolate easier in the microwave if anyone knows please advise :) )
crush candy canes and add to melted chocolate
while still warm pour mixture onto waxpaper lined cookie sheet
spread thinly
place cookie sheet in freezer until mixture has hardened
take out of freezer and crack bark into small pieces
place in decorative tin
do not refreeze
Easy no fail fudge
1 12 oz pkg. or 2 Cups of real chocolate chocolate chips. either milk chocolate or semi sweet. (I like semi sweet)
1 can of sweetened condensed milk (like eagle brand)
mix together over double boiler or a pan sitting in hot water until chips are completely melted.
Remove from heat and stir in 1 tsp pure vanilla extract and 1 Tbsp. butter. beat intil butter is melted. Add nuts if you wish and pour into buttered 8x8 pan. Cool in refrigerator.
4- layer bars..
sprinkle quaker oats in a 9x13 baking dish
cover with graham cracker crumbs
pour a stick of melted butter over the crumbs
evenly spread butterscotch morsels on top
evenly spread chocolate morsels
then do the same with coconut
pour a can of sweetened condensed milk and sprinkle the top with chopped pecans
bake at 350 about 30 minutes
cool and slice into squares

Prep. Time : 0:20
1 cup Cheerios®
1 cup Crispex®
1 cup pretzel sticks
1 cup peanuts OR cashews
12 oz. bag vanilla baking chips
1 Tbls. vegetable oil
-Combine cereal, pretzels, and nuts in bowl; set aside.
-Melt chocolate chips in the microwave or in the top of a heated double boiler.
-Stir oil into melted chocolate.
-Pour chocolate mixture over dry mixture and stir to coat.
-Press onto waxed paper and allow to cool overnight.
-Break up into pieces before serving.
Those are really good and I have another version the kids really love (so do I ) that are made with froot loops instead of cherrios and crispix

Serves : 18
9 cups Chex® cereal - any kind, rice and corn are good
6 oz. semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter
1 tsp. vanilla extract
1 1/2 cups powdered sugar
-Measure cereal into a large bowl; set aside.
-Microwave chocolate chips, peanut butter, and butter in bowl, uncovered, on high, for 1 minute.
-Stir, then microwave 30 seconds longer, until mixture stirs smooth.
-Stir in vanilla.
-Pour over cereal in bowl, stirring until cereal is covered.
-Pour into large Zip Loc® bag, add powdered sugar, and shake until well coated.
-Store in Zip Loc® bags or in air tight container in fridge.
NOTES : If you don't have a microwave, you can also melt everything on stove top.

Hey------I made those Reindeer turds. They are good. But we didn't know what size to make them 'cause we didn't know if they are big reindeer or small ones-hehehe. So my DH said make middle sized ones!!!!!! :D :p :p
