1 Attachment(s) Awww pammywammie, get your poor pretty kitty in the house before it freezes. Just because

Now with that said, I'll give you a delicious soup recipe that is very good plus filling & easy to make...
CORN CHOWDER
2 cups diced onions
1# bacon
2 cans of potatoes diced (I used fresh red potatoes boiled)
I can evaporated milk
1 can creamed corn
1 can kernel corn
1 can cheddar cheese soup
salt & pepper to taste
Brown pieces of bacon
After browning, remove the bacon & set aside
Pour off excess fat leaving about 4 TBS or so fat from the bacon
Saute the onions until soft but do not brown them
Mix in bacon, potatoes, milk, both cans of corn, cheddar cheese soup & stir...
Bon Apetite
ENJOY!!!!!!
1 Attachment(s) O.K. IF the Corn Chowder is too much work, then here's a REAL SIMPLE
& a cheapy soup to make., it only takes about 5 minuts...
Get a Pkg of Top Ramen noodle soup, (creamy chicken flavor) (30 oz.)
Boil two cups of water in a saucepan, add noodles & cook 3 minutes, stirring occasionally.
Turn off heat, add contents of seasoning pkg. & squeeze a little bit of fresh lemon juice & stir.
Serve immediately for best results as it will thicken. Makes two 8 oz. servings.
P.S.: I always add about a 1/4 more of water.
Very good & is as I said very very simple & fast.
Enjoy ------
Your soup sounds delicious Helen. Sorry I can't contribute here Pammywammy........I don't cook!!!! But if I did, this is what I would make..............yum yum.......(french onion soup)
1 Attachment(s) Ooooooooooooo, That's one of my YUM YUM's!!!!!!!!! :) :) :)
OK I'm curious...how did you not cook all your married life, raise kids, (and maybe DH) you must have had a maid?, DH who cooks?, or mom?, mother-in- law? ....I wanna know !!!!!!! so I can do the same thing........!!!!!
When MyDH and I first got Married I worked for 3 years and we ate out a lot...(he wasn't too fond of my cooking:D ) when kids came along I learned fast.....maybe I shouldn't have ...still have two grown kids living at home expecting mom to cook:mad:
I have to laugh at your name....when my daughter was younger
( like 6years old) she met her best friend, whose name was/is Pam well she would come over and my DH would call her
Pam-a-roni......... and wouldn't you know, they are now still friends and in their late forties.......she signs her Christmas cards with that name, and identifies herself on the phone the same way.
what I would like to know ......is....the picture of the cat yours? I would like to draw it, love the pose and snow effects, but would like permission first....thanks and like this thread too....I'm going to make the corn chowder from Heps tonight!!! and serve with corn muffins...yum....too bad Pammie coach......if you lived closer I'd have you over for some soup:D
OK....You asked and here you go.......
2- 61/2 ounce cans chopped clams (or you could use fresh)
1 pound thick sliced bacon
3&1/2 cups chopped potatoes
1 large onion chopped
24 ounces 1/2 & 1/2 or milk whichever you prefer
3 Tablespoons flour or cornstarch for thickening
1/2 teaspoon thyme (crushed,dried)
Sprinkle of crushed dry bay leaf
salt and lots of black pepper to taste
Drain clams reserving liquid. Add enough water to the clam liquid ( iactually purchase bottled clam juice instead of using H2O now) to measure 2 &1/2 cups, set aside. In large soup pot cook the bacon to desired doneness, remove cooked bacon with spoon leaving the drippings in the pan. Stir in the onion, and sweat them while scraping the bacon cracklings from the bottom of the pan. When onions are transparent, add the clam liquid and bring to boil. Add potatoes, cover and boil until slightly tender. Stir in the clams and bacon, and about 3/4 of the 1/2 & 1/2(reserve the leftover 1/2 & 1/2 for thickening). Warm through. Wile the chowder is warming, place the leftover 1/2 & 1/2 in a small jar, or container with a tight lid, and add the flour or cornstarch & the dried spices. Shake well, and stir into the chowder to thicken. Season with the salt and pepper to taste.........And there you have it.
You may need to add more thickener to it.....depending on how it looks.
This is my own personal recipe that I have come up with in the last 10 years (my married years) I make it for family potluck's, etc. Even when I make it @ home, I have to make a double batch, the hubby begs for it for weeks, and then absolutly pigs out on it until it is gone. It has been a big hit !!
Hope you try it !! (and like it)
Later~
1 Attachment(s) Thanks heps & moon child, I will try these.
Git overit. sure by all means draw that pic!!!!:D MMMMMMMMPamella i luv that soup!!
Here is my DH French Onion soup recipe. Yes! It looks just like the photo above.
FRENCH ONION SOUP
Appx. 4-6 servings
4 tablespoons butter
1 teaspoon sugar
3 large onions, thinly sliced (about 2 ½ cups)
2 cloves garlic, minced
3 14oz. cans beef broth (about 5 cups)
1½ cups red wine
1 bay leaf
salt and pepper to taste
4 – 6 sliced French bread, cut 1” thick
4 oz. Swiss or Gruyere cheese, shreddded (1 cup)
3 tablespoons brandy or cognac (optional)
In a large saucepan over moderate heat, melt the butter with the sugar. Add the onions and garlic and stir well to coat. Reduce heat and cook until onions are translucent and beginning to carmelize.
Add broth, wine, bay leaf, and salt and pepper. Increase heat and bring soup to a boil, then reduce and simmer, partially covered, for 45 minutes.
Preheat broiler or toaster oven.
Toast the slices of bread, then spread with butter.
Stir brandy into soup (if desired) and ladle into flameproof bowls. Top each with one slice of toast and some of the cheese. Broil 3” from heat for 30 seconds or until the cheese melts. Serve immediately.
Optional: If not using flameproof bowls, you can melt the cheese in a 325◦ oven, or in the microwave.
Enjoy

Ham and Bean Soup
2 cups dry great northern white beans
2 ½ quarts water
2 cups cubed cooked ham
1 cup sliced carrots
1 cup sliced celery
1 med onion, chopped
2 tsp. Salt ½ tsp oregano
1/8 tsp pepper
16 oz can whole tomatoes, cut up
Rinse beans, place in heavy 8 quart pot with water. Bring to boil over high heat; boil 2 minutes. Remove from heat and let stand for 1 hour. Add remaining ingredients. Simmer, covered, about two hours
This tastes best if allowed to cool and let flavors soak into beans. I fix it early in the day and reheat for dinner or serve the following day.
Great with cornbread
Chicken Soup or Stew
Simmer stewing chicken in pot for about two and a half hours with one chunked up yellow onion (leave papery skin on) three chunked up stalks of celery. A couple of carrots chunked up and a large bay leaf. A pinch each of pepper, rosemary, thyme and some dried parsley. About three Knorr brand Chicken bouillon (caldo de pollo) cubes.
Remove from heat and let chicken cool in broth.
Strain broth from solids, remove meat from chicken and return to broth, discarding remaining solids.
Add about ½ onion, diced, two or three stalks of celery, chopped, and about three carrots, sliced. ( I some times use about a cup of frozen mixed vegetables = corn, peas, green beans, lima beans). Adjust seasoning. Add salt or extra bouillon, pepper, ect. Then add a couple of hands full of Home made or Kluskey style noodles and simmer until noodles are tender (about fifteen min.)
To make chicken and dumplings leave out noodles and remove some broth and thicken like for gravy. Then drop biscuit dough into simmering chicken stew from a serving spoon and cover for about fifteen minutes or until dumplings are completely cooked and tender.
