mmm!! cookies! neil's mom makes yummy cookies!!! here: neil just went and stole me some recipes!!!
Dad's Cookies
1 c butter
1 c wh. sugar
1 c br. sugar
1 egg
1 tsp vanilla
1 ½ c oats
3/4 c coconut
1 tsp baking powder
1 tsp baking soda
mix all ingredients together with hands. Make small balls and place on cookie sheets. Do not flatten. Bake at 350 for 15 minutes. Makes about 3 ½ dozen.
Baker's Best Chocolate Chip Cookies
1 c butter

2 tsp vanilla
2 eggs
2 1/4 c flour
1 tsp baking soda
½ tsp salt
1 c choc chips
Optional:
1 c chopped nuts/or coconut/ or oatmeal
Beat butter, sugars, vanilla and eggs, till fluffy. Mix in flour, soda, salt by hand. Add choc. chips. Drop spoonfuls (small) onto ungreased cookie sheets. 10 min at 300. Makes 4 doz.

This is my ex mother-in-laws recipie that no one was allowed to have, they are the best cookies in the whole wide world and if she ( or my ex ) knew I had the recipie I would be dead..so enjoy and share them with the world!
Grandma’s Date Roll cookies
1 Cup shortening
1 Cup brown sugar
1 Cup white sugar
3 eggs, well beaten
4 Cups flour
1 tsp. Salt
1 tsp. Soda
Cream shortening and sugar, add beaten eggs and mix in dry ingredients. Divide the dough into halves or thirds. Roll each into a rectangle between sheets of waxed paper and spread with filling. Starting with a long side of rectangle, roll into a “log” and wrap with waxed paper. Refrigerate overnight. Slice ¼ inch thick and bake at 350’ 10 to 12 min.
Filling
16 oz. Chopped pitted dates
½ Cup chopped walnuts
¾ Cup water
½ Cup sugar
Cook over med heat until dates are soft and mixture thickens into a paste. Spread on dough and roll.
Makes about 6 doz. Cookies.

Baby Ruth Bars, or Frosted Squares
1 Cup light Karo syrup
1 Cup sugar
1 Cup peanut butter
4 Cups Rice Krispies
6 oz. Butterscotch chips
12 oz chocolate chips.
Pour Rice Krispies into large bowl and set aside: In med sauce pan, mix sugar corn syrup and peanut butter and bring to boil over med heat, stirring constantly. Pour over Rice Krispies and mix well. Press into buttered 13x9 pan. Melt butterscotch chips in microwave and spread over mixture. Let stand a few minutes then pour melted chocolate chips over all, spread like frosting, Refrigerate until chocolate hardens on top.
Makes 24-30 bars

Christmas Tea Cakes
Dough:
2 sticks butter (cold)
1/2 cup confectioner's sugar
3 cups flour
1 cup walnuts or pecans, chopped
Blend with a pastry cutter or fingers until you have a loose, crumbly dough. Form into balls (it will be somewhat crumbly to work with but they'll form). Bake on an ungreased baking sheet in a 400 degree oven for about 10-15 minutes. They won't look any different, but if you pick on up, turn it over (CAREFULLY) and it is golden brown on the bottom, they're done.
Frosting:
4 oz cream cheese
1 teaspoon vanilla
2 cups confectioner's sugar
Blend til smooth. Add milk or more powdered sugar to reach a smooth consistency.
Frost while still slightly warm. Add sprinkles if desired.
They're adorable and very Christmassy!

I Cup vanilla wafer crumbs
1 Cup powdered sugar 1/4 cup Rum
1 Cup finely chopped pecans 2 Tbs. Cocoa
1 1/2 Tbs. light corn syrup
Powdered sugar for rolling
Combine crumbs, pecans, sugar and cocoa. Blend in Rum and syrup. mix all ingredients; shape into 1 inch balls. Roll in powdered sugar.
substitute bourbon for rum if you like bourbon balls.

(super simple and REEEAAALLLYY GOOD!)
1/2 Cup Butter or margerine
1 Cup graham cracker crumbs
1 Cup coconut
1 (12oz.) pkg. chocolate chips
1 cup chopped pecans
1 can sweetened condensed milk
use an 8x8 in cake pan. Melt butter in pan, sprinkle graham cracker crumbs evenly over butter. Then sprinkle layers of coconut, chocolate chips, and finally nuts. pour sweetened condesed milk over all. Bake for 30 min. at 350 degrees cool completey before cutting into squares.
All sound delish and yummy but why have you all comitted the cardnial sin to not stating the obious

My all time favorite are sugar cookies....the ones that you roll out the dough, make your own shapes and decorate with colored frosting and sugar....
