Which projector have you got?
Have a look at Unicol.co.uk - they have very strong ceiling/wall mounts available for most types of projector.... not cheap though. Mine was £175 for my Sony VW11 (but cheaper and sturdier than the official Sony effort).
Mounting is pretty straightforward but you must ensure the projector can be ceiling mounted first, there's normally a vertical flip in the menu system. It should hang upside-down.
Make sure you locate the centre of a ceiling joist and that the lens is pointing towards the centre of the screen. I've managed to run the component cables through the loft but haven't got round to getting the electric done yet.

Have a look over @ the AV Forums, they have quite a few threads about this :) One I looked at said abot using http://custom1.farnell.com/cpc/product.asp?catalog%5Fname=cpc+catalogue&category%5Fname=&product%5Fid=ST0008166 and modding it to line up with the screw holes on the projector...........

Just make your own
It's amazing what you can do with bits you might have hanging around...

Take two desktop mic stands, screw the base from one to the other, Cut 2" PVC waste pipe to size (to hide cables), cut left over laminate flooring to size and drill holes to attach PJ to it, spray silver and screw to ceiling :D
Worked for me !

Here's a pic of my Sony mounted with the Unicol bracket:

The mounting bracket is a sort of gimbal so it can be swivelled in every direction. The vertical height can also be altered.

My dad made a projector mount for me, it's basically a pair of shelf brackets mounted upside down on the wall, then the projector is basically screwed onto a wooden board which slides onto the brackets, a couple of screws stop it sliding off but mean it can be easily taken down when it needs to be sent off to Panasonic for repair (again!):(
